Apples are rich in the polyphenol quercetin which is an anti-inflammatory compound. Apples are also a good source of gut supporting fibre, and stewed apple provides a good source of pectin which supports gut motility and detoxification. Apples are rich in immune supporting vitamin C.

Buying tips

Choose organic apples as they are number one on the dirty dozen for pesticide residues. Apples should be firm and not waxy which indicates that it has been coated to prevent it from drying out.

Storage tips

Store in a paper bag in the bottom of the fridge.

Cooking tips

Prep:

Stewed: Slice into even chunks and add to a pan with a little water or ghee and cinnamon. Simmer for 5-10 minutes until soft and juicy.

Raw: Slice raw into bircher muesli or use in salads to sweeten.

Baked: bake whole by removing the core. You can also stuff it by slicing the top of and then scooping out the centre. Fill with muesli or a filling of choice.

Core apple and slice. Layer into a baking dish and add a little water. Bake until soft and juicy.

Waste reduction tips

Use the core and any scraps to make home-made apple cider vinegar. If you have an apple glut you can preserve apple by making chutneys, juice, vinegar, jam.
